Elevate your dinner party with a lavish seafood platter instead of the usual antipasto.
Ingredients:
  • 227.50 gm extra virgin olive oil
  • 2 garlic cloves, finely chopped
  • 40.00 ml chopped basil
  • Zest and juice of 2 lemons
  • 4 blue swimmer crabs, halved, claws cracked
  • 4 lobster tails or small whole lobsters, halved, cleaned
  • 24 scampi, peeled (tails intact), deveined
  • 32 green prawns, peeled (tails intact), deveined
  • 350g clams (vongole)
  • 12 scallops in the half shell
  • 40.00 ml chopped flat-leaf parsley
  • 2 ripe avocados, peeled, stoned, roughly chopped
  • 126.25 gm thickened cream
  • 1 garlic clove, chopped
  • Juice of 1 lime
  • 200ml whole-egg mayonnaise
  • 1 small lime, zest grated, juiced
  • 22.00 gm sweet chilli sauce
  • 20.80 gm tomato sauce
Instructions:
  • Mix together the oil, garlic, basil, lemon juice, zest, and seasonings in a bowl. Brush the flavorful marinade over the seafood.
  • Preheat a barbecue hotplate to medium-high heat. Cook the crab and lobster for 2 minutes, followed by the scampi for another 2 minutes. Next, add the prawns and clams, cook for 3-4 minutes, then add the scallops. Once the clams open and the prawns and scallops turn opaque, transfer all seafood to a platter. Serve with parsley, avocado, and seafood sauces.
  • Create a velvety avocado cream by blending the ingredients in a food processor until creamy, then season with sea salt and freshly ground black pepper to your liking.
  • For the seafood sauce: Combine and whisk ingredients until well blended. Season with salt and pepper to taste.
