Ingredients:
  • 2 slices cured lemon
  • 0.5 cup mayonnaise
  • 1 tablespoon minced fresh tarragon
  • 1 teaspoon lemon juice
  • 1 pound extra large shrimp, peeled and deveined
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon kosher salt
Instructions:
  • Quickly rinse the cured lemons in cold water to remove brine, let sit for 10 minutes. Pat dry with paper towels and finely mince.
  • Combine minced lemon, mayonnaise, tarragon, and lemon juice in a bowl. Cover with plastic wrap and chill in the refrigerator until cold, around 15 minutes.
  • Get your outdoor grill ready by preheating it to high heat and giving the grate a light coating of oil.
  • Place the shrimp in a bowl and generously drizzle with olive oil. Sprinkle with paprika and salt, then mix well until the shrimp are fully coated.
  • Grill shrimp until bright pink and opaque in the center, approximately 2 minutes per side. Serve with lemon aioli.
