Grilled strawberry shortcake push-up pops - a delightful and irresistible summer dessert.
Ingredients:
  • 1 cup strawberries, grilled 3 to 4 minutes, then chopped
  • 1 tablespoon brown sugar
  • 2 cups Bisquick Heart Smart® mix
  • 2/3 cup low-fat milk
  • 4 tablespoons sugar
  • Grated peel of 1 lemon
  • Fat-free whipped topping
Instructions:
  • Combine juicy grilled strawberries with a sweet touch of brown sugar; let sit.
  • Preheat oven to 425°F. Grease 16 mini muffin cups. Combine Bisquick mix, milk, sugar, and lemon peel. Fill muffin cups with the batter. Bake for 10 to 12 minutes until tops are golden brown. Let cool briefly before gently removing from cups and cooling completely.
  • Fill each push-up pop with a shortcake followed by whipped topping and approximately 1 teaspoon of strawberries. Chill in the refrigerator until serving.
