Tangy barbecue sauce smothers tender veggies for a flavorful dish.
Ingredients:
  • 4 small red potatoes, cut into 3/4-inch pieces
  • 4 small Yukon gold potatoes, cut into 3/4-inch pieces
  • 1 medium dark-orange sweet potato, peeled and cut into 3/4-inch pieces
  • 3 tablespoons honey mustard barbecue sauce
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon vegetable oil
  • 1 teaspoon chopped fresh sage, if desired
  • 1/2 teaspoon salt
  • 1 small green bell pepper, cut into 1-inch pieces
  • 1 large onion, cut into thin wedges
Instructions:
  • Prepare the grill for direct heat. Put all potato pieces in a microwave-safe dish. Cover with plastic wrap, leaving a small opening to vent steam. Microwave on High for 8 to 10 minutes, pausing to stir halfway through, until potatoes are tender. Let them cool slightly before using.
  • Combine barbecue sauce, zesty lemon juice, rich oil, fragrant sage, and a pinch of salt in a medium bowl. Add in the potatoes, vibrant bell pepper, and flavorful onion. Transfer the mixture to a grill basket.
  • Grill vegetables over medium heat, stirring occasionally, for 10-15 minutes until potatoes are tender and lightly browned. Cover while cooking.
