Grilled Three-Herb Chicken

Elevate grilled chicken with zesty citrus and herb marinade.
Ingredients:
  • 1/2 cup vegetable oil
  • 1/2 cup lime juice
  • 2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
  • 2 tablespoons chopped fresh or 2 teaspoons dried oregano leaves
  • 2 tablespoons chopped fresh or 2 teaspoons dried thyme leaves
  • 1 teaspoon onion powder
  • 1/4 teaspoon lemon-pepper seasoning
  • 4 chicken thighs (about 1 lb)
  • 4 chicken drumsticks (about 1 lb)
Instructions:
  • Combine all ingredients except chicken in a shallow glass or plastic dish, or a heavy-duty resealable bag. Add chicken thighs and drumsticks and coat them with the marinade. Cover the dish or seal the bag and refrigerate for at least 30 minutes, but no more than 24 hours, turning the chicken occasionally.
  • Preheat gas or charcoal grill. Take chicken out of marinade, keeping the marinade for later. Place chicken on the grill, skin sides down, over medium heat. Cook covered for 15 minutes. Flip the chicken and brush with marinade. Cover and cook for another 15 minutes. Brush with marinade and continue cooking for 5 to 15 more minutes until chicken juices run clear when cut near the bone (180°F). Dispose of any leftover marinade.
