Enhance grilled porterhouse steaks with a flavorful garlic and olive oil puree spiked with red pepper flakes.
Ingredients:
  • 2 (10 ounce) porterhouse steaks
  • kosher salt and ground black pepper to taste
  • 4 cloves garlic, finely chopped
  • 0.5 cup olive oil, divided
  • 0.25 teaspoon red pepper flakes
  • 1 medium lemon, cut into quarters
Instructions:
  • Prepare your outdoor grill by preheating it to medium-high heat and lightly oiling the grate. Season your steaks generously with salt and pepper.
  • Grill steaks until they are slightly firm and pink in the center, about 12 to 14 minutes, flipping halfway. Aim for an internal temperature of 140°F (60°C) for medium doneness.
  • As the steaks cook, place garlic in a microwave-safe bowl. Add a sprinkle of salt and pour in 2 tablespoons of olive oil. Use the back of a sturdy knife to mash garlic into a paste. Stir in the rest of the oil and red pepper flakes. Microwave until hot, stirring every 30 seconds, for about 1 to 1 1/2 minutes.
  • Take the steaks out of the oven and allow them to rest, covered, for 4 to 5 minutes. Drizzle each steak with 2 tablespoons of oil mixture and squeeze lemon wedges over them.
