Grilled Vegetables and Ravioli

Grilled vegetables complement cheesy ravioli in under 30 minutes.
Ingredients:
  • 1/4 cup olive or vegetable oil
  • 1 teaspoon garlic pepper
  • 1/2 teaspoon salt
  • 2 small zucchini, cut lengthwise in half
  • 2 medium red, yellow or green bell peppers, cut lengthwise in half and seeded
  • 1 small red onion, cut into fourths
  • 1 package (9 ounces) refrigerated cheese-filled ravioli
  • 1 tablespoon chopped fresh or 1 teaspoon dried basil leaves
  • 1 teaspoon chopped fresh or 1/4 teaspoon dried thyme leaves
  • 1/4 cup shredded Parmesan cheese
Instructions:
  • Prepare the grill by spraying the rack with cooking spray. Heat the grill using coals or gas for direct heat. Combine 2 tablespoons of oil with garlic, pepper, and salt. Brush this mixture onto the cut sides of the vegetables.
  • Grill zucchini, bell peppers, and onion cut sides down for 10 to 12 minutes, brushing with oil mixture occasionally, until crisp-tender.
  • As the veggies char on the grill, prepare and boil the ravioli according to package instructions. Drain and transfer back to the saucepan.
  • Slice zucchini, bell peppers, and onion. Combine ravioli, vegetables, 2 tablespoons of oil, basil, and thyme. Heat everything together, then sprinkle with cheese before serving.
