Sesame Ginger Grilled Vegetables and Soba Noodles

Create a vibrant vegetarian main dish by mixing grilled veggies with sugar snap peas. Add cooked chicken for a flexitarian option that satisfies the whole family.
Ingredients:
  • 6 oz uncooked soba (buckwheat) noodles or whole grain vermicelli
  • 1 medium red bell pepper, quartered
  • 1 medium yellow summer squash, cut in half lengthwise
  • 1 medium zucchini, cut in half lengthwise
  • 1 teaspoon vegetable oil
  • 1 box (9 oz) frozen sugar snap peas
  • 1/4 cup sesame ginger marinade with mandarin orange juice
  • 1 teaspoon sesame seed, if desired
Instructions:
  • Preheat gas or charcoal grill. Cook noodles in a 3-quart saucepan according to package instructions. Drain and return to saucepan, covering to keep warm.
  • Spread bell pepper, summer squash, and zucchini in a non-greased 15x10x1-inch pan. Brush with oil. Grill the vegetables directly over medium heat, turning occasionally and covering the grill, until crisp-tender, about 8 to 12 minutes.
  • Cook the frozen sugar snap peas according to the instructions on the box. Let them cool for 1 minute, then drain and transfer to a large bowl.
  • Roughly chop the grilled vegetables and combine them with peas in a bowl. Pour in the marinade and mix well to coat. Toss in the drained noodles and mix again to coat. Transfer the dish to a platter and sprinkle with sesame seeds.
