Grilled pork burgers with sesame-ginger flavor topped with marinated cucumber-carrot pickles on sesame buns, perfect for an Asian-inspired meal.
Ingredients:
  • 0.5 cup chopped cucumber, seeded if large
  • 0.25 cup thinly sliced green onion
  • 0.25 cup chopped carrot
  • 0.5 cup rice vinegar
  • 2 tablespoons mirin (Japanese rice wine)
  • 1 teaspoon white sugar
  • 2 pounds ground pork
  • 2 tablespoons tamari sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon mirin (Japanese rice wine)
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon chili garlic sauce
  • 1 teaspoon fish sauce
  • 6 sesame seed hamburger buns
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh mint
Instructions:
  • Combine the cucumber, green onion, carrot, rice vinegar, 2 tablespoons of mirin, and sugar in a bowl. Stir until thoroughly mixed. Chill in the refrigerator for 3 hours or overnight.
  • Combine the pork with tamari sauce, sesame oil, mirin, ginger, chili garlic sauce, and fish sauce in a mixing bowl. Shape the mixture into 6 patties and refrigerate for 1 hour before cooking.
  • Prepare your outdoor grill by preheating it to medium-high heat and lightly oiling the grate.
  • Grill the burgers for about 5 minutes on each side until cooked through and golden brown. Serve on sesame seed buns and top each burger with 1/4 cup of the pickle mixture. Optional: garnish with fresh basil and mint.
