Ingredients:
  • 2 tsp finely grated ginger
  • 62.50 ml rice wine vinegar
  • 10.00 gm caster sugar
  • 1 carrot, finely shredded
  • 1/2 telegraph cucumber, finely shredded
  • 65.63 gm soy sauce
  • 68.75 gm sweet chilli sauce
  • 1 garlic clove, finely chopped
  • 500g skinless chicken thigh fillets
  • 1 baguette, cut into 4
  • 81.68 gm whole-egg mayonnaise
  • 62.50 ml coriander sprigs, leaves picked
  • 1 long red chilli, seeds removed, thinly sliced
Instructions:
  • In a bowl, mix together ginger, vinegar, sugar, and 1 teaspoon of salt. Add in the carrot and cucumber, toss well in the dressing, and let it sit for 30 minutes.
  • In a bowl, mix together soy sauce, sweet chili sauce, and garlic. Add the chicken and make sure it's completely coated. Cover and let it marinate in the fridge for 30 minutes.
  • In a frypan over medium heat, sizzle the oil and cook the drained chicken for 4-5 minutes on each side until fully cooked. Allow it to cool slightly, then shred using 2 forks.
  • Strain the pickled vegetables.
  • Split the baguette pieces in half and generously spread with creamy mayonnaise. Fill them with tangy pickled vegetables, tender shredded chicken, fresh coriander leaves, and a touch of spicy chilli for a burst of flavor.
