Indulge in a delightful twist on classic bánh mì with flavorful chicken and zesty pickled veggies on crispy bread.
Ingredients:
  • 0.5 cup rice vinegar
  • 0.25 cup white sugar
  • 0.25 cup water
  • 0.25 cup matchstick-cut carrots
  • 0.25 cup peeled and matchstick-cut daikon radish
  • 0.25 cup thinly sliced white onion
  • 1 skinless, boneless chicken breast half
  • 1 pinch garlic salt, or to taste
  • ground black pepper to taste
  • 1 (12 inch) French baguette
  • 4 tablespoons mayonnaise
  • 0.25 cup thinly sliced cucumber
  • 1 tablespoon fresh cilantro leaves
  • 1 small jalapeno pepper, cut into 1/16-inch-thick matchsticks
  • 1 wedge lime
Instructions:
  • In a saucepan, simmer rice vinegar, sugar, and water until sugar dissolves, about 1 minute. Let the mixture cool.
  • Combine the carrot, radish, and onion in a bowl, then generously coat them with the chilled vinegar mixture. Allow the mixture to marinate for a minimum of 30 minutes to enhance the flavors.
  • Allow the vegetables to marinate while you position an oven rack about 6 inches away from the heat source and preheat the broiler. Give a gentle oiling to a slotted broiler pan.
  • Season chicken breast generously with aromatic garlic salt and freshly ground pepper.
  • Arrange the chicken on the baking sheet. Broil it, flipping it once, until beautifully browned and fully cooked, approximately 6 minutes per side.
  • Lay the chicken on a cutting board and slice it into bite-sized pieces.
  • Cut the baguette in half lengthwise and hollow out the center to make space for the fillings.
  • Toast baguette slices under the broiler until lightly golden, 2 to 3 minutes.
  • Remove the vegetables from the marinade, allowing any excess vinegar mixture to drip off.
  • Spread mayonnaise on both halves of toasted baguette. Layer chicken on the bottom half. Top with cucumber, pickled vegetables, cilantro, and jalapeño. Squeeze lime over fillings and cover with the other baguette half.
  • Cut the sandwiches in half to create two delicious 6-inch portions ready to be enjoyed.
