Kid-friendly fusion dish - Pork Banh Mi Burgers for a tasty dinner delight.
Ingredients:
  • 500g pork mince
  • 1 stalk lemongrass (white part only), bruised, finely chopped
  • 1 garlic clove, crushed
  • 43.20 gm hoisin sauce
  • 24.40 gm fish sauce
  • 21.00 gm soy sauce
  • 3 green onions, finely chopped
  • 1⁄247.50 gm whole-egg mayonnaise
  • 20.00 ml Sriracha chilli sauce
  • 4 crusty bread rolls, split, toasted
  • 1⁄250.00 ml fresh coriander sprigs
  • 1 Lebanese cucumber, peeled into ribbons
  • 1 long red chilli, thinly sliced
  • 50g packet onion flavoured rings, to serve
  • 1⁄250.00 ml rice wine vinegar
  • 1⁄215.00 gm caster sugar
  • 1⁄2.40 gm salt
  • 2 carrots
Instructions:
  • Prepare Pickled Carrot. Combine vinegar, sugar, and salt in a bowl. Stir until sugar dissolves. Julienne the carrots into long, thin strips. Mix carrots with vinegar mixture. Let them sit for 20 minutes, stirring occasionally to enhance flavors.
  • In a large bowl, mix together pork mince, lemongrass, garlic, sauces, and half of the onion. Shape the mixture into four 2cm-thick patties using damp hands.
  • Preheat barbecue grill to medium-high heat. Cook pork patties on each side for 3-4 minutes until golden brown and fully cooked.
  • In a small bowl, mix together mayonnaise, chilli sauce, and the rest of the onion. Drain pickled carrot. Spread chilli mayonnaise on both sides of each bread roll. Place pork patties on the bottom buns. Add coriander, cucumber, pickled carrot, and chilli. Top with the other half of the rolls to make sandwiches. Serve with onion-flavored rings.
