Grilled zucchini with rosemary: Fresh squash coated in garlic, herbs, and olive oil, for a flavorful summer dish.
Ingredients:
  • 0.33333334326744 cup extra-virgin olive oil
  • 1 tablespoon chopped fresh rosemary
  • 2 cloves garlic, minced
  • 1 teaspoon sea salt
  • 0.5 teaspoon ground black pepper
  • 6 small zucchini, sliced lengthwise into 1/4-inch thick strips
  • 3 tablespoons balsamic vinegar
Instructions:
  • Get the grill ready by preheating it to medium heat and greasing the grate lightly with oil.
  • Combine olive oil, rosemary, garlic, sea salt, and black pepper in a small bowl and mix until evenly combined; brush the mixture onto zucchini strips.
  • Grill zucchini until nicely browned on both sides, about 5 to 7 minutes per side. Place on a serving platter and finish with a generous drizzle of balsamic vinegar before serving.
