30-minute Beef and Broccoli Stir Fry: A quick and budget-friendly twist on a classic dish, perfect for busy weeknights. Serve over rice for a satisfying meal.
Ingredients:
  • 1 cup water
  • 6 tablespoons lower-sodium soy sauce
  • 3 tablespoons packed light brown sugar
  • 1 tablespoon cornstarch
  • 3 cloves garlic, minced
  • 1 tablespoon minced fresh ginger (from 1-inch piece)
  • 2 teaspoons unseasoned rice vinegar
  • 3 tablespoons neutral oil (such as canola), divided
  • 12 ounces (about 5 1/4 cups) fresh broccoli florets
  • 1 pound 90/10 lean ground beef
  • 1/2 teaspoon kosher salt
  • 2 teaspoons toasted sesame seeds (optional)
  • 2 green onions, thinly sliced (optional)
  • Steamed white rice, for serving
Instructions:
  • Create the sauce by combining water, soy sauce, brown sugar, cornstarch, garlic, ginger, and rice vinegar in a medium bowl until well mixed and the sugar dissolves. Set aside.
  • In a large nonstick skillet over medium-high heat, shimmer 2 tablespoons of oil. Toss in the broccoli and cook until tender-crisp with a touch of char, stirring occasionally, for 6 to 7 minutes. Transfer the broccoli to a large bowl and set aside.
  • Brown the beef in a skillet over medium heat with 1 tablespoon of oil and salt until crumbled and browned, about 5 minutes. Add the sauce and cook for an additional 3 minutes until slightly thickened and flavors meld, stirring constantly.
  • Add the broccoli back into the skillet and stir constantly until the sauce thickens and coats the meat and vegetables evenly, approximately 3 minutes.
