Savory ground beef and veggie shepherd's pie, topped with creamy mashed potatoes and melted Cheddar cheese.
Ingredients:
  • cooking spray
  • 1 tablespoon vegetable oil
  • 1 pound lean ground beef
  • 1 teaspoon dried basil
  • 1 cup green beans
  • 1 cup tomatoes, diced
  • 1 clove garlic, minced
  • 2 potatoes, cooked and mashed
  • 1 large egg, beaten
  • 0.25 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 2-quart casserole dish with cooking spray.
  • In a large skillet over medium heat, sauté onions in oil until translucent, approximately 5 minutes. Add ground beef and basil, stirring until beef is browned and crumbly, about 5 minutes. Incorporate green beans, tomatoes, and garlic, cooking until beans are slightly softened, another 5 minutes. Transfer the mixture to a casserole dish.
  • Combine mashed potatoes, water, and beaten egg in a medium bowl, stirring until velvety. Evenly spread this luscious mixture over the beef.
  • Bake in the preheated oven until the potatoes are golden brown on top, for about 15 to 20 minutes. Sprinkle with cheese and bake for an additional 5 minutes until the cheese is melted.
