Delicious Mexican guacamole with nopales for a unique twist on a classic!
Ingredients:
  • 0.5 cup diced nopales (Mexican cactus)
  • 1 large ripe avocado, halved and pitted
  • 0.5 lime, juiced
  • 1 tablespoon olive oil
  • salt to taste
  • 1 plum tomato, seeded and chopped
  • 1 fresh jalapeno pepper - seeded, deveined, and minced, or to taste
  • 4 sprigs fresh cilantro, chopped
Instructions:
  • In a small nonstick skillet over medium heat, sauté nopales until tender, stirring occasionally, for about 10 minutes. Allow to cool before using.
  • Combine ripe avocado with freshly squeezed lime juice, extra virgin olive oil, and a pinch of salt in a bowl. Gently fold in diced tomato, spicy jalapeno, fragrant cilantro, and cooked nopales.
