Affordable steamed pudding, delicious with warm cream.
Ingredients:
  • 175g fresh white breadcrumbs
  • 25g self-raising flour
  • 85g caster sugar
  • 125g good-quality strawberry jam, warmed
  • 4.40 gm vanilla extract
  • 3 eggs, lightly whisked
  • 125g unsalted butter, melted
  • 2.50 gm bicarbonate of soda
  • Thick cream, to serve
Instructions:
  • Grease a 1.2-litre pudding basin with butter.
  • In a large bowl, mix together breadcrumbs, flour, and sugar. Stir in jam, vanilla, eggs, and butter until well combined.
  • Combine the dissolved soda with the mixture, then pour into a basin. Create a pleat in the center of a baking paper sheet to allow for expansion and use it to cover the pudding. Secure with a string and foil. Place the basin in a saucepan, fill with water halfway up the sides of the basin, bring to a boil, cover, reduce heat to low, and steam for 2 hours. Let it sit for 5 minutes before turning out and serving with cream.
