Gujerati cabbage with mustard seeds

Flavorful vegetarian dish that pairs perfectly with BBQ meats.
Ingredients:
  • 27.60 gm sunflower oil
  • 1 green chilli, sliced
  • 40.00 ml brown mustard seeds
  • 20.00 ml cumin seeds
  • 1 onion, thinly sliced
  • 500g shredded savoy cabbage
  • 1 tsp ground turmeric
  • 2.50 gm ground cumin
  • 6 dried red chillies, crumbled
  • 2 tomatoes, chopped
  • 40.00 ml chopped coriander
  • 5.20 gm shredded coconut
  • Juice of 1 lime, plus wedges to serve
  • 4 eggs, fried
  • 1 tsp nigella seeds (see note)
Instructions:
  • In a large frypan over medium-high heat, warm the oil. Add green chilli, mustard, and cumin seeds. Cook, stirring, until the mustard seeds start popping, about 1 minute. Add the onion and cook until softened, about 5 minutes, stirring occasionally.
  • Lower the heat to medium and add cabbage, turmeric, cumin, dried chili, and tomato. Cook while tossing for 3 minutes.
  • Simmer gently with 150ml of water until cabbage softens. Season, then mix in coriander, coconut, and lime juice. Serve on plates, topped with fried eggs and nigella seeds. Accompany with lime wedges.
