Authentic British Guyanese cookies made with a rich buttery flavor. Butter can be substituted with margarine for a lighter option. Truly irresistible!
Ingredients:
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 1 teaspoon baking powder
  • 1 cup butter, cut into pieces
  • 2 eggs
  • 0.5 cup milk
  • 0.5 teaspoon almond extract
  • 0.75 cup flaked coconut
Instructions:
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Combine flour, sugar, baking powder, and salt in a large bowl. Cut in butter with a pastry blender or fork until mixture resembles fine crumbs. In a separate bowl, whisk together eggs, milk, vanilla extract, and almond extract. Create a well in the dry ingredients, pour in wet ingredients, add coconut, and mix briefly until combined. Spoon onto ungreased cookie sheets in rounded tablespoonfuls.
  • Bake until golden brown, approximately 20 minutes in the preheated oven.
