Meringue-topped chocolate chip cookie bars for the ultimate sweet and chewy treat.
Ingredients:
  • 2 eggs, separated
  • 1 tablespoon water
  • 2 cups all-purpose flour
  • 1.5 cups brown sugar, divided
  • 1 cup butter, at room temperature
  • 0.5 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 (8 ounce) package chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C) to create the perfect cooking environment.
  • In a small bowl, combine egg yolks and water, whisk until smooth.
  • In a large bowl, mix together the egg yolk mixture, flour, 1/2 cup brown sugar, butter, white sugar, vanilla extract, baking soda, and salt until a dough forms using an electric mixer on low speed.
  • Evenly press the dough into a 9x13-inch baking pan, then scatter chocolate chips over the dough.
  • In a clean glass, metal, or ceramic bowl, whisk egg whites until foamy. Slowly add 1 cup brown sugar while whisking until stiff peaks form. Spread the meringue over chocolate chips.
  • Bake in the preheated oven for 20 to 25 minutes until the top is lightly golden and the edges start to pull away from the sides of the pan. Allow to cool completely for about 30 minutes before cutting into squares.
