Buttery mini cakes topped with peach slices halfway through baking for a decadent twist on a French classic by Chef John.
Ingredients:
  • 3 ounces unsalted butter plus additional for greasing
  • 3 egg whites
  • 0.5 cup almond meal
  • 3 tablespoons all-purpose flour plus additional for dusting pan
  • 0.25 teaspoon vanilla extract
  • 0.125 teaspoon salt
  • 12 small pieces of peeled peach
Instructions:
  • Preheat your oven to 400 degrees F. Grease a 12-muffin mini-muffin tin generously with butter and dust each cup with a pinch of flour, shaking to evenly coat the bottoms.
  • In a saucepan over medium heat, melt the butter until it turns golden brown, about 4 minutes, making sure to keep the pan moving to prevent burning. Once it gets foamy, remove from heat.
  • In a large bowl, vigorously whisk together egg whites and sugar until the sugar dissolves and the egg whites become thick and foamy, about 2-3 minutes. Combine almond meal, flour, vanilla, and salt. Finish by incorporating the browned butter into the mixture.
  • Fill muffin cups nearly to the top and gently tap the pan to remove any air bubbles.
  • After baking for 5 minutes, gently place small pieces of fresh peach over the top of the financiers. Return the pan to the oven and bake for an additional 10 to 12 minutes, or until golden brown.
  • Allow to cool for a minimum of 10 minutes prior to taking out of the pan.
