Transform halibut fish tacos with zesty cilantro-lime marinade for a crowd-pleasing, grilled sensation.
Ingredients:
  • 1 lime, juiced
  • 0.25 cup chopped cilantro
  • 1 jalapeno pepper, diced
  • 1 tablespoon ground ancho chile powder
  • 0.25 teaspoon ground cumin
  • salt and ground black pepper to taste
  • 0.5 pound halibut fillets
  • 8 corn tortillas
  • 2 cups shredded cabbage
  • 1 (8 ounce) jar salsa
  • 1 cup shredded pepper Jack cheese
  • 1 avocado, sliced
Instructions:
  • Combine lime juice, olive oil, cilantro, jalapeno, chile powder, cumin, salt, and pepper in a large bowl or resealable zip-top bag. Add halibut and marinate for 20 to 25 minutes, making sure not to over-marinate to prevent the lime juice from 'cooking' the fish.
  • Preheat an outdoor grill to medium heat and lightly oil the grate. Grill the marinated fillets for 5 minutes, then flip and continue cooking until the fish flakes easily with a fork, approximately 2 minutes.
  • Heat tortillas on the grill or stove until warm. Divide halibut evenly among tortillas and add cabbage, salsa, pepper Jack cheese, and avocado on top.
