Whip up tasty fish tacos in just 20 minutes by pan-searing cod, tilapia, or halibut and pairing with a crisp cabbage slaw. Perfect for busy weeknights!
Ingredients:
  • For the fish:
  • 1 pound cod, tilapia, halibut, or other white fish filets
  • 2-3 teaspoons chili powder, enough to coat the fish
  • For the fish taco sauce:
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 3-4 tablespoons lime juice (from 2 limes)
  • 1 teaspoon hot sauce, optional
  • To assemble:
  • 1/2 small head red cabbage, shredded (about 4 cups)
  • 12 taco-sized corn or flour tortillas
  • 1 avocado, sliced
  • 4 radishes, thinly sliced
  • 4 spring onions, thinly sliced
  • 1/3 cup roughly chopped cilantro
Instructions:
  • Prepare the fish taco sauce by mixing sour cream, mayonnaise, lime juice, and hot sauce (optional) in a small bowl until well combined.
  • Prepare the red cabbage slaw by tossing shredded cabbage with 3 tablespoons of taco sauce in a medium bowl until lightly coated. Add extra taco sauce to taste, ensuring a light, even coating on the cabbage.
  • Heat the tortillas: Warm each tortilla individually in a dry skillet over medium-high heat for 30 seconds on each side. Alternatively, wrap 1 to 3 tortillas in a damp paper towel and microwave for 30 seconds until warm. Keep the warmed tortillas wrapped in a clean dish towel while preparing the fish.
  • Season the fish: Coat both sides of the fish with a flavorful blend of chili powder and salt, using your fingers to ensure even coverage.
  • Sear the fish: Heat olive oil in a large skillet over medium-high heat. Add the fish and cook for 2 minutes on each side until opaque throughout and easily flakes with a fork. Remove any smaller pieces that break off and transfer to a serving platter.
