Grilled haloumi salad with homemade dressing - perfect for entertaining!
Ingredients:
  • 1/2 green oakleaf lettuce, leaves separated, washed, dried
  • 2 large avocados, halved, stone removed, sliced crossways
  • 50g snow pea sprouts
  • 2 x 250g haloumi, drained
  • 1 fresh long green chilli, chopped
  • 2 green shallots, trimmed, chopped
  • 1 garlic clove, chopped
  • 2 tsp ground coriander
  • 5.00 gm sweet paprika
  • 1 tsp ground turmeric
  • 42.00 gm fresh lemon juice
  • 80ml (1/3 cup) olive oil
  • Pinch of salt
Instructions:
  • For the harissa dressing, combine chili, shallots, garlic, coriander, paprika, turmeric, and lemon juice in a mortar and pestle. Gently crush the ingredients until well combined. Drizzle in the oil and continue to mix. Season with salt to taste.
  • Combine crisp lettuce, ripe avocado, and fresh snow pea sprouts in a generously sized serving bowl, gently mixing them together.
  • Slice the haloumi into 5 long slices, then cut each slice into 3 pieces. Heat a large non-stick frying pan over medium-high heat. Cook one-third of the haloumi for 1 minute on each side until golden and heated through. Transfer it to the bowl with the lettuce. Repeat this process in two more batches with the rest of the haloumi.
  • Pour the flavorful harissa dressing all over the salad and mix gently. Serve right away for the best taste experience.
