Crispy haloumi and pea fritters paired with a vibrant tomato salad - a delicious and satisfying dish!
Ingredients:
  • 240g pea
  • 250g Brand Haloumi, coarsely grated
  • 2 Free Range Eggs, lightly whisked
  • 75g self-raising flour
  • 80ml milk
  • 45.50 gm olive oil
  • 350g mixed medley tomatoes, halved or thinly sliced
  • 1 red onion, thinly sliced
  • 250.00 ml mint leaves, coarsely shredded
  • 40.00 ml pine nuts, toasted
  • 20.00 ml red wine vinegar
  • Greek-style yoghurt, to serve
  • Lemon wedges, to serve
Instructions:
  • In a bowl, crush the peas with a fork until coarsely mashed. Mix in the haloumi and egg, then add the flour and milk. Stir everything together until combined, then season to taste.
  • In a frying pan set over medium heat, warm 2 tablespoons of oil. Pour three 1/4-cup portions of pea mixture into the pan, allowing space for spreading. Cook until golden, about 2 minutes. Flip the pea mixture and cook for another 2 minutes until cooked through and golden. Transfer to a plate lined with paper towel and cover with foil to keep warm. Repeat in three more batches with the rest of the pea mixture.
  • In a bowl, mix together the tomatoes, onions, fresh mint, and pine nuts. Drizzle with vinegar and the remaining oil. Season with salt and pepper. Toss everything together until well combined.
  • Plate the fritters and salad individually. Accompany with yogurt and lemon wedges.
