Pea, zucchini and haloumi fritters

Fresh peas shine as versatile ingredient or quick side dish.
Ingredients:
  • 20g butter
  • 2 zucchini, trimmed, finely chopped
  • 150g pea
  • 75g plain flour
  • 1 egg, lightly whisked
  • 80ml milk
  • 200g haloumi, finely chopped
  • 2 green onions, trimmed, thinly sliced
  • 40.00 ml finely chopped dill
  • Light olive oil, to shallow fry
  • Dill sprigs, to serve
  • Tamar Valley Greek Style Yoghurt, to serve
Instructions:
  • In a hot medium frying pan, melt the butter. Stir in the zucchini and cook for 2 minutes until just tender. Add the peas and cook for 1 more minute until heated through. Set aside to cool slightly.
  • In a large bowl, combine flour with egg and milk, stirring until smooth. Mix in zucchini, haloumi, green onions, and dill. Season the mixture with salt and pepper.
  • In a large non-stick frying pan over medium heat, heat oil. Spoon mixture in 1/4-cup portions around the pan, leaving space for spreading. Cook until golden, about 2 minutes. Flip with a spatula and cook for another minute until done. Transfer to a paper towel-lined plate. Repeat with remaining mixture in 3 more batches.
  • Present the fritters on plates and garnish with fresh dill sprigs. Serve promptly with yogurt and optional lemon wedges on the side.
