Zucchini and pea fritters with smoked salmon

Elevate zucchini fritters with smoked salmon and zesty horseradish cream for a gourmet party appetizer.
Ingredients:
  • 120g pea
  • 1 zucchini, ends trimmed, coarsely grated
  • 2 Free Range Eggs, lightly whisked
  • 80ml milk
  • 110g self-raising flour
  • Olive oil spray
  • 300g sour cream
  • 20.00 ml horseradish cream
  • 11.80 gm Dijon mustard
  • 200g smoked salmon slices
Instructions:
  • Boil peas for 2 mins in a saucepan, then cool under cold water. Drain and crush with a fork. Combine in a bowl with zucchini and egg. Gradually mix in milk and flour. Season to taste.
  • 1. Coat a large non-stick frying pan with oil and heat over medium heat. 2. Spoon six 1/2-tbs portions of mixture onto the pan. 3. Cook for about 1 minute until bubbles appear on the surface. 4. Flip and cook for another minute until light golden and fully cooked. 5. Repeat in 6 more batches with the rest of the batter.
  • Mix together the sour cream, horseradish, and mustard in a small bowl. Spread the mixture over the fritters and then layer with salmon.
