Haloumi with balsamic tomatoes

Quick and stunning appetizer ready in under 20 minutes.
Ingredients:
  • 4 (about 600g) ripe tomatoes, cut into chunks
  • 40.00 ml balsamic vinegar
  • 80mls (1/3 cup) olive oil
  • Salt & ground black pepper, to taste
  • 165.00 ml shredded fresh basil
  • 1 200g haloumi, cut into 4 even slices
  • 40.00 ml plain flour
Instructions:
  • In a medium bowl, gently mix the tomatoes. In a small bowl, blend balsamic vinegar, 60mls (1/4 cup) olive oil, salt, and pepper. Pour over tomatoes, add basil, and toss gently. Set aside.
  • Coat the haloumi with flour, ensuring to shake off any excess. Heat olive oil in a large frying pan over medium heat. Cook the haloumi for 3-4 minutes on each side until golden and slightly melted around the edges.
  • On individual plates, stack a slice of haloumi cheese. Spoon over the tomato mixture, pour the juices, sprinkle with more black pepper, and serve promptly.
