No-cook, quick and easy protein breakfast that's perfect for meal prep.
Ingredients:
  • 6 hard-boiled eggs
  • 0.25 cup mayonnaise, or more to taste
  • 1 tablespoon mustard
  • 1 dash hot sauce
  • 1 pinch Salt and pepper to taste
  • 1 (8 ounce) package Smithfield® Cubed Ham
  • 1 shallot, chopped
  • 2 ribs celery, chopped
Instructions:
  • Cut the hard-boiled eggs in half and transfer the yolks to a bowl. Coarsely chop the egg whites and keep them aside.
  • Combine egg yolks, mayonnaise, mustard, hot sauce, salt, and pepper in a bowl. Mash with a fork until smooth. Mix in reserved chopped egg whites, ham, shallot, and celery. For a creamier texture, add more mayonnaise to taste.
