Create a delicious midweek meal using basic ingredients.
Ingredients:
  • 1 egg, plus 1 egg yolk
  • 200g ham, finely chopped
  • 150g soft goat's cheese
  • 1 bunch chives, finely chopped
  • 40 wonton wrappers (see note)
  • 100g unsalted butter
  • 200g baby spinach leaves
  • 21.00 gm lemon juice
Instructions:
  • Combine beaten egg and yolk with ham, cheese, 1/4 cup chives, and season generously in a bowl.
  • Place 20 wonton wrappers on a clean surface. Spoon a generous teaspoon of the ham mixture in the middle of each wrapper. Moisten the edges of the wrappers with water and top with another wrapper, pressing to seal and remove any air. Use a pastry cutter or knife to trim, if desired.
  • Bring a pot of salted water to a boil. Cook the ravioli in two batches for 2-3 minutes until the pasta is cooked and the filling is set.
  • Melt butter in a large frypan, then sauté spinach until wilted and butter begins to brown. Stir in lemon juice, season, and add ravioli; gently combine. Serve in bowls, garnish with chives, and enjoy.
