Indulge in a cozy navy bean soup with savory ham, fresh veggies, and aromatic spices - a delicious way to enjoy leftover ham!
Ingredients:
  • 1 pound dry navy beans, soaked overnight
  • 4 quarts water
  • 1 pound leftover ham bone with meat attached
  • 1 onion, finely diced
  • 2 carrots, sliced
  • 2 stalks celery, diced
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon ground black pepper
  • 0.5 teaspoon paprika
Instructions:
  • Place water, ham bone, and pre-soaked beans in a large stockpot. Bring to a boil, then simmer until beans are almost tender.
  • Debone and chop meat. Reserve 1/3 of the beans and mash using a potato masher or food processor.
  • Add the ham and beans back to the stockpot along with onion, carrots, celery, garlic powder, pepper, and paprika. If using drippings from a previous ham, add them now. Simmer until the vegetables are tender, then serve.
