Ingredients:
  • 4 mixed-colour peppers
  • 2 red onions
  • 1 x 1.2 kg whole chicken
  • 4 heaped teaspoons rose harissa
  • 4 sprigs of fresh mint
Instructions:
  • Preheat the oven to 180ºC/350ºF/gas 4. Deseed and chunk the peppers, quarter and petal the onions, and place in a 30cm x 40cm roasting tray. Using a sharp knife, butterfly the chicken, score the legs, and place on the tray. Season with harissa, sea salt, black pepper, and red wine vinegar. Toss well to coat everything evenly. Roast for 50 minutes until the chicken is cooked through and crispy. Garnish with mint leaves before serving.
