Savor the exotic flavors of spiced harissa chicken wings inspired by Middle Eastern cuisine.
Ingredients:
  • 60ml olive oil
  • 42.00 gm lemon juice
  • 20.00 ml harissa (Tunisian chilli paste) (see note)
  • 2 garlic cloves, thinly sliced
  • 12 chicken wings, tips removed
  • 6 preserved lemon quarters (see notes), flesh and pith discarded, rind cut into thin strips
  • 40.00 gm caster sugar
  • 52.80 gm orange marmalade
  • 125.00 ml fresh coriander
  • 125.00 ml fresh basil
  • 125.00 ml fresh flat-leaf parsley
  • 40.00 ml roughly chopped dill
Instructions:
  • Combine the extra virgin olive oil, juice, harissa, garlic, and 1 teaspoon salt in a large bowl. Add the chicken wings and toss to coat. Refrigerate and marinate for 10-15 minutes.
  • In a saucepan, combine lemon rind, sugar, marmalade, and 100ml water. Bring to a boil, stirring until the sugar dissolves. Lower the heat and simmer gently, occasionally scraping the sides of the pan, until it thickens to a jam-like consistency, about 8-10 minutes. Let it cool.
  • Preheat a chargrill pan over medium-high heat. Grill the chicken, starting with the meaty side down, for 10 minutes, then flip and grill for an additional 5 minutes until fully cooked.
  • Toss the fresh herbs with olive oil in a bowl to create a flavorful herb salad.
  • Arrange the chicken on a serving platter and generously scatter with fresh salad. Accompany with the flavorful marmalade on the side.
