Indulgent mashed potatoes topped with flavorful lamb chops and asparagus - a family favorite!
Ingredients:
  • 20.00 ml Middle Eastern harissa spice mix
  • Zest of 1 lemon
  • 1 garlic clove, crushed
  • 60ml olive oil
  • 8 Lamb Loin Chops
  • 1kg brushed potatoes, peeled, coarsely chopped
  • 80ml milk
  • 30g butter, chopped
  • 130g hommus
  • 2 bunches asparagus, trimmed
  • Olive oil spray
  • 2 spring onions, thinly sliced
  • Lemon wedges, to serve
Instructions:
  • In a large dish, mix harissa, lemon zest, garlic, and oil. Season well. Add lamb and toss until evenly coated. Let it marinate for 10 minutes.
  • While the potato is boiling in a saucepan for 12-15 minutes until tender, drain and mash it with milk and butter until smooth. Finally, stir in the hummus, season well, and enjoy!
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill lamb for 2-3 minutes on each side for a medium cook or to your desired doneness. Place on a plate, cover with foil, and let it rest for 5 minutes. Lightly coat asparagus with oil and grill for 3 minutes until tender and slightly charred.
  • Plate the mashed potatoes and asparagus. Arrange the lamb and spring onions on top of the mashed potatoes. Serve with lemon wedges.
