Impress everyone with succulent Middle Eastern spiced lamb.
Ingredients:
  • 62.50 ml harissa (Middle Eastern spice blend)
  • 56.88 gm extra virgin olive oil
  • 2 garlic cloves, crushed
  • 40.00 ml chopped fresh coriander leaves
  • 2 x 1.2kg butterflied legs of lamb
  • Extra fresh coriander sprigs, to serve
Instructions:
  • Mix harissa, oil, garlic, and coriander in a bowl. Spread the spice mixture all over the lamb on a board, making sure the skin side is down. Transfer the lamb to a large glass or ceramic dish, cover it, and refrigerate for a minimum of 2 hours to enhance the flavors.
  • Preheat a barbecue plate or grill on high heat. Grill the lamb, skin-side down, for 10 minutes on medium-high heat. Flip and cook for an additional 5 minutes. Reduce heat to medium-low, cover the lamb with the hood, and cook for 15 to 20 minutes more until desired doneness. Rest the lamb loosely covered with foil for 10 minutes before serving.
  • Cut lamb into slices. Season generously with salt and pepper. Garnish with additional coriander before serving.
