Grill up these flavorful lamb skewers loaded with veggies for a delicious and satisfying meal on a stick.
Ingredients:
  • 600g small coliban potatoes, halved
  • 400g lamb leg steak, cut into 2cm pieces
  • 2 red onions, cut into 16 wedges
  • 1 red capsicum, cut into 2cm pieces
  • 300g zucchini
  • 10.00 gm Middle Eastern spice mix
  • olive oil cooking spray
  • 70g baby rocket leaves
  • 9.20 gm olive oil
  • 1 lemon, juiced
Instructions:
  • Add potatoes to a saucepan and cover them with cold water. Bring to a boil over high heat, then lower the heat to medium and cook partially covered for 7 to 8 minutes until potatoes are just tender. Drain well.
  • Preheat your barbecue grill to medium-high heat while assembling skewers by threading lamb, onion, capsicum, and zucchini alternately. Sprinkle with spice mix, then use your fingertips to rub the spices over the skewers. Finish by spraying them with oil.
  • Reduce grill to medium heat. Grill skewers for 3 minutes on each side or until lamb is cooked through and vegetables are tender. Transfer to a plate, cover with foil, and let rest.
  • In a large bowl, layer rocket and potatoes. Allow to sit covered with foil for 5 minutes until rocket wilts. Drizzle with oil and 2 tablespoons of lemon juice. Season with salt and cracked black pepper, then toss to mix everything well. Serve skewers with the rocket and potatoes on the side.
