Effortless slow-cooked lamb with roasted vegetables and tangy yoghurt sauce - let your BBQ shine!
Ingredients:
  • 280.00g yoghurt
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1 tsp chilli flakes
  • 2.50 gm ground ginger
  • 1.5kg Lamb Leg
  • 2 x 500g pkts Roasting Vegetables with Garlic & Rosemary
  • 2.50 gm ground cumin, extra
  • 1/2 tsp chilli flakes, extra
Instructions:
  • Preheat a covered barbecue on medium heat or alternatively, preheat oven to 180°C.
  • In a large bowl, mix together yoghurt, cumin, coriander, turmeric, chilli flakes, and ginger until well combined.
  • Make three shallow cuts on the top of the lamb using a small sharp knife. Coat the lamb with the yoghurt mixture, ensuring it’s well rubbed all over the lamb and into the cuts.
  • Place the lamb in a deep roasting pan and cook in a covered barbecue or oven for 2 ½ hours until cooked to your liking. Add the vegetables to the pan halfway through cooking. Let it rest covered with foil for 10 minutes before serving.
  • In a small bowl, mix together the additional yogurt, cumin, and chili flakes.
  • Place the sliced lamb and vegetables attractively on a serving platter, then serve with the yogurt mixture.
