Elevate your family roast with Indian spiced slow-roasted lamb, served with refreshing cucumber yogurt and warm roti.
Ingredients:
  • 280.00g yoghurt
  • 20.00 ml garam masala
  • 2 tsp ground turmeric
  • 10.00 gm ground ginger
  • 62.50 ml chopped coriander
  • 21.00 gm lemon juice
  • 2kg lamb shoulder, bone in
  • 1 Lebanese cucumber, seeded, finely chopped
  • Roti, to serve
  • Sliced red chilli, to serve
  • Lemon wedges, to serve
  • Coriander sprigs, to serve
  • Mango chutney, to serve
Instructions:
  • Preheat your oven to 160C and prepare a large baking dish by lining it with baking paper.
  • In a small bowl, mix yoghurt, garam masala, turmeric, ginger, chopped coriander, and lemon juice. Season the mixture. Rub the seasoned yoghurt all over the lamb. Place the lamb in a prepared dish, cover with foil, and roast for 3 hours until very tender. Then, increase oven temperature to 240°C and roast uncovered for another 20 minutes or until golden brown. Allow the lamb to rest covered for 15 minutes before serving.
  • In a small bowl, mix together the extra yoghurt and cucumber. Season the mixture. Serve the lamb alongside the yoghurt mixture, roti, chilli, lemon wedges, coriander sprigs, and chutney.
