Fall harvest salad, ideal for intimate dinners or festive gatherings.
Ingredients:
  • 1 red pear, chopped
  • 1 medium avocado, pitted, peeled and chopped
  • 4 cups chopped green leaf or romaine lettuce
  • 4 cups chopped red leaf lettuce
  • 1 Granny Smith apple, chopped
  • 1/2 red onion, chopped
  • 1/2 cup chopped walnuts
  • 1/2 cup crumbled chèvre (goat) cheese (2 oz)
  • 1/4 cup dried cranberries
  • 1/4 cup poppy seed dressing
  • 1/4 cup balsamic vinaigrette dressing
Instructions:
  • Combine all ingredients in a large bowl and then transfer to a serving bowl or plate.
  • If desired, top with additional chèvre and dried cranberries for a delightful finishing touch. Serve promptly.
