Harvest Corn Chowder

Delicious quick corn chowder bursting with harvest flavors, ready in 35 minutes.
Ingredients:
  • 1/2 pound bacon, cut up
  • 1 medium onion, chopped (1/2 cup)
  • 2 medium celery stalks, chopped (1 cup)
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 4 cups milk
  • 1/8 teaspoon pepper
  • 1 can (14.75 ounces) cream-style corn
  • 1 can (15 to 16 ounces) whole potatoes, drained and diced
  • Chopped fresh parsley
Instructions:
  • Fry bacon in a 3-quart saucepan until crispy. Remove bacon and set aside, leaving 3 tablespoons of bacon fat in the saucepan. Saute onion and celery in the flavorful bacon fat for about 2 minutes, then remove from heat.
  • Mix in the flour until fully incorporated. Cook over medium heat, stirring constantly, until the mixture is bubbling; then remove from the heat.
  • Add the milk and stir gently. Bring to a boil while stirring continuously. Allow it to boil for 1 minute while stirring consistently.
  • Combine the pepper, corn, and potatoes in the pot and heat until hot. Stir in the bacon and garnish each serving with parsley before enjoying.
