Fall Harvest Quesadillas: Pumpkin, Apple, Brie - a sweet and savory fusion!
Ingredients:
  • 1 (15 ounce) can pumpkin puree
  • 2 teaspoons brown sugar
  • 0.75 teaspoon pumpkin pie spice
  • 1 tablespoon butter
  • 1 Granny Smith apple, thinly sliced
  • 2 teaspoons white sugar
  • cooking spray
  • 1 (8 ounce) round Brie cheese, thinly sliced
  • 1 (10 ounce) package flour tortillas
Instructions:
  • Combine the pumpkin puree, brown sugar, and pumpkin pie spice in a bowl.
  • In a pan over medium heat, melt butter and add apple slices. Sprinkle with white sugar and cinnamon. Cook until soft, about 8 to 10 minutes. Set aside.
  • Heat a second skillet over medium heat and lightly grease with cooking spray. Add a tortilla to the skillet, spread a generous amount of the pumpkin mixture over it, then top with brie on one side and cooked apples.
  • Fold the tortilla in half once it becomes golden brown in 2 to 3 minutes. Cook for an additional 1 minute, then remove from the skillet. Repeat with the remaining tortillas and filling. Allow them to cool for 5 to 10 minutes before serving.
