Indulge in a cozy fall dinner of pork roast with sweet potatoes and Brussels sprouts for a comforting and delicious meal.
Ingredients:
  • 3- to 3 1/2-lb boneless pork loin roast
  • 1/2 cup orange marmalade
  • 3 tablespoons orange juice
  • 2 teaspoons fennel seed, crushed
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon dried sage leaves, crushed
  • 2 medium dark-orange sweet potatoes, peeled, cut into 1 1/2-inch pieces
  • 1 lb Brussels sprouts, cut in half if large
  • 1/4 teaspoon pepper
Instructions:
  • Preheat the oven to 325°F. Place the pork on a rack in a shallow roasting pan. In a small bowl, combine marmalade, orange juice, fennel, thyme, and sage. Brush half of the mixture over the pork.
  • Combine sweet potatoes and Brussels sprouts with oil, salt, and pepper in a large bowl, ensuring they are evenly coated. Surround the pork with the seasoned vegetables and place an ovenproof meat thermometer into the thickest part of the pork.
  • Roast uncovered for 1 hour. Brush pork with the rest of the marmalade mixture, then stir vegetables gently to coat in pan juices. Continue roasting for about 15 minutes until the thermometer reads 155°F and vegetables are tender. Cover the pork with foil and let it rest for 10 to 15 minutes until the thermometer reads 160°F.
