Harvest Upside-Down Cake

Indulge in a delightful upside-down cranberry apple cake for a perfect dessert.
Ingredients:
  • 1/3 cup butter or margarine
  • 1/2 cup packed brown sugar
  • 2 medium cooking apples, peeled and sliced
  • 1/2 cup whole berry cranberry sauce
  • 1 1/3 cups Gold Medal™ all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/3 cup butter or margarine, softened
  • 2/3 cup milk
  • 1 teaspoon vanilla
  • 1 egg
Instructions:
  • Preheat oven to 350°F. In a heavy 10-inch ovenproof skillet or square pan (9 x 9 x 2 inches), melt 1/3 cup of butter in the oven. Evenly sprinkle brown sugar over the melted butter. Arrange apple slices in a circular row around the edge of the skillet, then place the remaining slices in 2 more rows within the skillet. Spoon cranberry sauce between the rows of apple slices.
  • Combine flour, granulated sugar, baking powder, and salt in a large bowl. Mix in 1/3 cup of butter, milk, and vanilla. Beat on medium speed for 2 minutes, scraping the bowl constantly. Then add the egg and beat on medium speed for another 2 minutes, scraping the bowl frequently. Pour the mixture over the fruit in the skillet.
  • Bake for approximately 50 minutes, or until a toothpick inserted in the center comes out clean. As soon as it's done, invert a heatproof serving plate on top of the skillet, flip it over, and let it sit for a few minutes. Then, carefully remove the skillet to allow the delicious brown sugar mixture to drizzle over the cake.
