Spicy Hatch chile salsa with roasted peppers, tomatoes, onion, and cilantro - a crowd-pleaser!
Ingredients:
  • 5 Hatch chile peppers, stems removed
  • 1 (28 ounce) can diced tomatoes
  • 1 (14.5 ounce) can diced tomatoes with roasted garlic
  • 0.5 onion, roughly chopped
  • 0.25 cup chopped fresh cilantro
  • 1 pinch garlic powder, or to taste
Instructions:
  • Position the oven rack 6 inches from the heat source and preheat the broiler. Line a baking sheet with aluminum foil and arrange the chile peppers on top.
  • Broil peppers until skins blacken and blister, 5 to 8 minutes. Transfer to a bowl, seal tightly with plastic wrap, and let steam for 20 minutes. Peel and discard skins before using.
  • Combine the roasted chile peppers, both diced tomatoes, onion, cilantro, and garlic powder in a food processor or blender until you reach your desired consistency.
