Spicy Hatch chiles mixed with smoky sausage and bacon elevate this quick and flavorful dirty rice. Perfect for a hearty weeknight meal.
Ingredients:
  • 1 pound mild Hatch chile peppers - halved, stemmed, and seeded
  • 1 pound mild breakfast sausage
  • 0.5 pound bacon, sliced into small strips
  • 1 large onion, diced
  • 2.25 cups water
  • 1.5 cups uncooked jasmine rice
Instructions:
  • Preheat the broiler with the oven rack positioned 6 inches from the heat source. Line a baking sheet with aluminum foil and place the chile peppers cut-side down on top.
  • Broil until the peppers' skin blackens and blisters, for 5 to 8 minutes.
  • Transfer the charred peppers to a bowl and cover tightly with plastic wrap to create a steam effect. Let the peppers steam and cool for approximately 20 minutes. Peel off and discard the skins before chopping the flesh.
  • In a large skillet over medium heat, brown the sausage and bacon for 5 to 8 minutes. Remove excess grease, then add the onion and sauté until golden for 3 to 5 minutes.
  • First, heat water in the skillet until boiling. Then, add the rice and simmer on low heat until the water is absorbed and the rice is tender, which should take 15 to 20 minutes. Fluff the rice with a fork and gently mix in the chopped peppers before serving.
