Impress with this show-stopping strawberry layer cake - moist white cake, creamy frosting, and fresh strawberries. A guaranteed crowd-pleaser!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • 1 cup buttermilk, room temperature
  • 1/2 cup vegetable oil
  • 3 eggs, room temperature
  • 2 egg yolks, room temperature
  • 1/2 teaspoon vanilla
  • Pinch of coarse kosher salt
  • Non-stick baking spray with flour
  • 12 tablespoons (1 1/2 sticks) unsalted butter, room temperature
  • 4 oz (half of 8-oz package) cream cheese, room temperature
  • 3 1/2 cups powdered sugar
  • 3 tablespoons fresh strawberry puree
  • 1 cup sliced fresh strawberries (about 10 medium), to layer in between the frosting and cake
Instructions:
  • Heat your oven to 350°F.
  • Using a handheld electric mixer in a large bowl, beat together cake mix, buttermilk, oil, eggs, egg yolks, vanilla, and a pinch of coarse kosher salt for 90 seconds.
  • Coat three 8-inch cake pans with non-stick baking spray that includes flour. Divide the batter equally among the pans, using about 1 1/4 cups for each. (For precision, use a kitchen scale.)
  • Bake for approximately 13 minutes or until a toothpick inserted into the center emerges clean.
  • Allow the cakes to rest in the pans for 10 minutes before gently transferring them onto cooling racks. Once completely cooled, frost the cakes after approximately 1 hour.
  • Beat room temperature unsalted butter and cream cheese together using an electric mixer with a paddle attachment until smooth. Gradually mix in the powdered sugar, fresh strawberry puree, vanilla, and a pinch of coarse kosher salt.
  • Place one cake layer on a serving plate. Spread a layer of frosting and arrange 1/2 cup of fresh strawberries on top. Repeat with the second cake layer and remaining 1/2 cup of strawberries. Place the third cake layer on top. Apply a thin crumb layer of frosting, then refrigerate for 30 minutes. Finish by frosting the sides and top of the cake with the remaining frosting.
