Hayden Quinn's grilled sweet corn with parmesan and chipotle mayo recipe

Easy, flavorful cheesy sweet corn - perfect BBQ side dish.
Ingredients:
  • 4 corn on the cob, husk and silk removed
  • Cobram Estate extra light and delicate olive oil spray
  • Sea salt, to taste
  • 120g mayonnaise
  • 20.00 ml chipotle hot sauce
  • 62.50 ml freshly grated parmesan
  • 62.50 ml coriander leaves, finely chopped
  • 62.50 ml crispy fried shallots*
  • 1 lime, cut in wedges
Instructions:
  • Preheat your BBQ grill on high heat. Generously coat corn with olive oil spray and sprinkle with sea salt. Grill for 10 minutes, turning occasionally to achieve a beautifully charred and tender finish.
  • Blend mayonnaise and chipotle sauce thoroughly and refrigerate until ready to use while the corn is cooking.
  • Take the corn off the heat and transfer it to a serving plate. Top the corn with a generous drizzle of chipotle mayo, a sprinkle of grated parmesan, fresh coriander, and crispy fried shallots. Accompany with lime wedges for serving.
