Hazelnut Chocolate Cookie Balls

Decadent chocolate cookies with hazelnut spread - perfect for Christmas or any chocolate craving. Great for gifting (no one will want to give these up).
Ingredients:
  • 1 cup butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons hazelnut spread with cocoa (from 13-oz jar)
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 1/2 cups Gold Medal™ All Purpose Flour
  • 3/4 cup unsweetended baking cocoa
  • 3/4 cup hazelnuts (filberts), toasted, skins removed
  • 1 cup semisweet chocolate chips
  • 1 teaspoon vegetable oil
Instructions:
  • Preheat the oven to 350°F. In a large bowl, combine butter, powdered sugar, hazelnut spread, vanilla, and salt until fully incorporated. Mix in flour and cocoa until smooth.
  • Encase 1 hazelnut with about 1 1/2 teaspoons of dough, ensuring it is completely covered, shaping into 1-inch balls. Place the balls 1 inch apart on ungreased cookie sheets. Finely chop the rest of the hazelnuts and set aside.
  • Bake for 8 to 10 minutes until firm. Let cool for 2 minutes before transferring to cooling racks. Cool completely for about 15 minutes.
  • Microwave chocolate icing ingredients uncovered in a small microwavable bowl on High for 30 to 60 seconds, stirring once, until chips are softened and smooth. Spoon approximately 1 teaspoon of chocolate onto cookies, then sprinkle with roughly 1/2 teaspoon of chopped hazelnuts. Allow the icing to set for about 30 minutes.
