Indulge in chocolate-glazed hazelnut cookie delights.
Ingredients:
  • 1/2 cup hazelnut spread with cocoa
  • 1/2 cup powdered sugar
  • 1/4 cup chopped hazelnuts (filberts)
  • 1 cup granulated sugar
  • 1/2 cup butter or margarine, softened
  • 1 egg
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Additional granulated sugar
  • 1 cup dark chocolate chips
  • 2 teaspoons shortening
  • 6 teaspoons finely chopped hazelnuts, if desired
Instructions:
  • Preheat the oven to 375°F. Combine 1/2 cup hazelnut spread, powdered sugar, and 1/4 cup chopped hazelnuts in a small bowl. Form the mixture into 24 (1-inch) balls.
  • In a large bowl, combine 1 cup granulated sugar, 1/2 cup hazelnut spread, butter, and egg. Use an electric mixer on medium speed or a spoon to mix well. Add flour, baking soda, baking powder, and salt, and stir until well combined.
  • Take the dough and divide it into 24 (1 1/2-inch) balls. Press each ball into a 2 1/2-inch circle. Wrap each circle around a hazelnut, making sure it's completely covered. Place the filled circles on an ungreased cookie sheet, leaving about 3 inches of space between each one.
  • Bake for 9 to 10 minutes until edges are firm. Let cool for 5 minutes, then transfer to a cooling rack.
  • In a small microwave-safe bowl, heat chocolate chips and shortening uncovered on high for 30 seconds, then stir. Continue microwaving for about 30 seconds more or until the mixture can be stirred smooth. Drizzle over cooled cookies and sprinkle each with 1/4 teaspoon of finely chopped hazelnuts. Allow the cookies to stand until the glaze sets.
