Elevate asparagus with Parmesan, mushrooms, basil, and toasted hazelnuts for a delicious twist.
Ingredients:
  • 2 cups water
  • 2 pounds asparagus spears
  • 2 tablespoons margarine or butter
  • 1 package (8 ounces) sliced mushrooms (3 cups)
  • 1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried basil leaves
  • 1/4 teaspoon coarsely ground pepper
  • 1/4 cup shredded Parmesan cheese
  • 1/4 cup chopped hazelnuts (filberts)
Instructions:
  • In a large skillet, bring water to a boil. Add asparagus and continue boiling. Lower heat to medium, cover, and cook for 4 to 6 minutes until asparagus is crisp-tender. Drain and set aside.
  • In a skillet over medium-high heat, melt margarine until bubbly. Add mushrooms and sauté for 2 to 3 minutes until golden brown, stirring often.
  • Combine asparagus, basil, salt, and pepper with mushrooms until veggies are well-seasoned and asparagus is warmed. Top with cheese and hazelnuts.
